Ntolilo (Sweet potato leaves)
What you need:
Sweet potato leaves
Lemons
Water
Salt
Tomatoes
Groundnut flower
How to prepare:
Ntolilo has a tendency of getting slimy/slippery if not well prepared. To avoid this, pluck the leaves a day before you wish to cook them and dry them in the sun.
Once dried for a day, heat some water to boil, put in some salt and then throw in the sweet potato leaves. Squeeze in some lemon juice. The lemon juice makes the vegetables tastier and also lessens their slipperiness.
Once well cooked, put in enough cut tomatoes, then the groundnut flower. Cook a little longer to let the groundnut flower cook.
Serve with Nsima.
