Zitumbuwa (banana fritters)
A simple inexpensive but delicious snack such as zitumbuwa is what most of us need. With our busy schedules, it can take us less than 30 minutes to make this healthy snack. Enjoy!
What you need:
3 ripe bananas mashed
1 tsp sugar
100g mgaiwa (maize flour)
Generous pinch of salt
Oil for frying
Method
Mix the mashed bananas thoroughly with the salt, sugar and mgaiwa until you make smooth dough but not as soft as that of a cake. Heat the oil to a depth of about 3cm in a pan until very hot. Add tablespoonfuls of the dough or using palms of your hands form a patty from the dough to the oil and fry until golden brown. Drain on kitchen paper and serve hot as a snack.
