Baking Easter Family Cake

This cake is simple to bake but divine to eat. Our staff writer, RUTH AYAYA BANDA made this cake over the Easter break and has decided to share the recipe with us.

1 cup sugar

1 cup water

1 egg

2 cup flour

1 cup mayonnaise

2 tsp. baking soda

1 tea spoon vanilla

5 table spoon baking cocoa

Method

Cream the sugar and mayonnaise together. Add egg and vanilla. Dissolve baking soda in water and add to the mixture.

Sift flour and cocoa together before pouring into the mixture. Stir till the mixture is smooth.

Pour into a greased baking dish and bake at 350 degrees Celsius for 30 minutes.

As for frosting (icing) use any type that you can easily access.

Here is the recipe for the frosting:

3 tablespoons butter or margarine, softened

Quarter cup cocoa powder

One and one third cup powdered sugar/confectioners’ sugar/icing sugar

2 tablespoons milk

Half teaspoon vanilla extract

Method

Put all ingredients in a bowl. With a hand mixer, beat until you have a smooth paste. Add milk as needed to make the paste thin. Don’t make it too thin, though.

You can bake one layer or two layers at a time. You do not bake the layers at once. Put icing or frosting between the individual cakes to make the cakes into one.
